射频技术在农产品和食品加工中的应用

Radio Frequency Technology and Its Application in Agro-product and Food Processing

摘要:

论述了射频技术的工作原理、特点，及其在农产品和食品加工领域的应用研究现状和存在的主要问题，并提出了该技术在我国的应用前景。射频技术所特有的选择性加热、含水率自平衡效应以及能量穿透深度大等优点，使其在农产品干燥、灭虫，以及粉末、多孔物料的杀菌和热处理领域具有巨大的发展潜力。

Abstract:

Radio frequency (RF) technology was introduced. Application prospect of RF in China was proposed. RF heating technology have advantages of selective heating effect, moisture leveling effect and high energy penetration depth, and widely used in agro-product drying, insect control, sterilization and heat treatment of porous food materials.
